    How to bring your catch

    • Clean it. Skinless, boneless fillets in a sealed bag.
    • Ice it. Restaurants will refuse warm fish — bring a small cooler.
    • Call ahead. Confirm Cook Your Catch hours and per-person prep fee.
    • Know your fish. Snapper, grouper, snook (catch & release only — not eligible), tripletail and pompano are common.
